Capers

Origin: South-East Asia

The capers are the fruit of the caper shrub, while the caper is its flower bud. We find the capers candied in the vinegar at the Italian traders and in the specialized shops.

Used for a very long time, Romans used it to perfume their sauces.

Capers are in fact the small flower bud of a shrub called "capparis spinosa " being able to reach a little more than one metre high than we often find on the dry and rocky grounds, there where grow generally olive trees. Buttons are harvested in the hand between the end of May and the beginning of October; the smallest, the youngest are the most appreciated. They are generally candied in the vinegar or preserved in brine.

Medical properties:


For a long time, the peoples living in the circumference of the Mediterranean pond used capers as remedy against the scurvy, the rheumatisms and as diuretic! As for Romans, they thought that they were aphrodisiac and to spicy their dishes for their taste and their virtue.
